Sour Cherry Coffee Cake

It is sour cherry season! You picked or bought a lovely bunch of sour cherries and now you aren't sure what to do with them. If you prefer a coffee cake recipe, this one is easy to prepare and is a fantastic treat to make for breakfast, snack, or dessert. So, get baking and enjoy all of those fresh (or frozen) sour cherries!
Ingredients:
⅔ c oil
1 c sugar + 2 Tbsp
4 eggs
1 ⅓ c flour
1 tsp vanilla
1 ½ tsp baking powder
⅔ c orange juice
½ c brown sugar
1 tsp cinnamon
1 c pitted sour cherries (fresh or frozen)
Glaze:
1 c confectioners’ sugar
½ tsp vanilla
3 Tbsp water
Directions:
Preheat the oven to 350° F. Prepare an 8-inch round pan. Mix together the oil, 1 c sugar, eggs, vanilla, orange juice, cinnamon, flour and baking powder to make a batter. In a small bowl, combine 2 tablespoons of sugar and the cherries. Toss together to coat the cherries. Gently fold the cherries into the batter and pour into the baking pan. Bake at 350°F until the center is set. Remove from the oven and allow to cool. Mix the glaze ingredients together and drizzle over the cooled cake.
