Cinnamon Streusel Muffins

This Cinnamon Streusel Muffin is a classic muffin for those on-the-go breakfast days. Or the days when you want to relax while you have a coffee and a muffin. Or for those days when you need something that will last all day inside your bag because you have no refrigeration available. Or for the days when you just really want to eat cake as a substitute for a meal and can get away with it because it is a muffin. You get the idea. You will want to make these. Enjoy!


Ingredients:

1 c oil

¾ c sugar

1 tsp vanilla

1 egg

2 c flour

2 tsp baking powder

¼ tsp salt

¾ c milk or milk substitute

 

 

Topping/filling:

¾ c flour

½ c brown sugar

½ c pecans, chopped

c oil

1 tsp cinnamon

 

Icing:

1 c confectioners’ sugar

1 tsp vanilla

1 Tbsp water


 

Directions:

Preheat the oven to 350 F and line a muffin tin.  Combine the flour, sugar, baking powder, and salt in a bowl. Mix together. Add in the the oil, vanilla, egg, and milk.   Mix until everything is wet (some small lumps may remain).  In a small bowl, combine the topping ingredients.  This might be a little wet, but trust me, it will be good. Scoop a small amount of batter into each muffin cup.  Sprinkle some (or rather, place blobs) of the topping/filling mixture over the batter already in each muffin cup.  Add more batter on top of the filling, enough to cover the filling and at least be ¾ filled. Sprinkle on more topping and gently press down into the batter.  Bake until the muffins are golden and spring back when gently pressed in the center of the tops.  Allow to cool.  Mix together the icing ingredients and drizzle over the cooled muffins.  Enjoy!
