Banana Cheesecake with Sweet Sour Cream Topping

I know that banana cheesecake is not your typical cheesecake, but I encourage you to take the leap and try this.  It is so delicious and unexpected!  Really, this cheesecake is a winner.

 

Ingredients:

3 pkg (24 oz) cream cheese

½ c sugar

1 tsp vanilla

3 eggs

2-3 ripe bananas

2 graham pie crusts

 

Topping:

1 c sour cream

1 c whipped cream

½ tsp vanilla

3 Tbsp sugar

 

Directions:

Preheat the oven to 350°F.  In a mixing bowl, smash the bananas.  Add in the cream cheese, sugar, vanilla, and eggs.  Beat with a mixer until well combined.  Pour into the graham cracker crusts and place in the oven.  Bake until the tops are less shiny, beginning to turn a golden color, and are jiggly but not sloshy.  Remove from the oven and allow to cool completely on the counter or in the refrigerator.  Combine the sour cream, whipped cream, vanilla and sugar.  Spread over the tops of the cheesecakes.  Refrigerate until serving.
