Pesach is the most labor-intensive holiday of the Jewish year (and I don’t just mean that year when I gave birth on Pesach). We exhaust ourselves cleaning and preparing, and then continue by exhausting ourselves cooking too! This year, why not give ourselves a little respite and make simple, yet delicious food for our sedarim and other meals? I am a firm believer that more complicated recipes do not necessarily make for tastier ones. We can make simpler dishes with all the wow factor of the more complex ones, and we should definitely take this approach this Pesach. So, grab your menu and let’s get planning our simplified Pesach menu.
These main dishes are simple and will keep everyone at your table happy.
Deliciously Simple Italian Herb Chicken
Sweet Potato Chicken
Moroccan-Spiced Chicken with Olives and Raisins

You can also find the recipes for Olive Chicken, Lime-Marinated Steak, Apple BBQ Pastrami, Seasoned Salmon, Pesach Spinach Pie, and more, all in my cookbook, and none requiring any adjustments for Pesach.
How about some side dishes? We always need those. Easy dishes including Dilled Carrots, Overnight Potato Kugel, Oregano Sweet Potatoes, and so many other simple, yet delicious side dish recipes are in my cookbook. Maybe some quick salads are what you are looking for? Look no further than these (also in my cookbook): Farmer’s Salad, Guatemalan Avocado Salad, Fig and Jerky salad, Israeli Quinoa Salad, etc. You can also make some of these, straight form my blog.
Classic Cucumber Salad
Leek and Quinoa Patties

And a staple of many Pesach menus, don’t forget the ever-important Classic Matzah Brei:
And a special treat for you, as a thank you for reading all the way to the bottom of this post, I have a bonus Pesach recipe for you. My favorite easy brisket recipe!
Wine BBQ Brisket
Ingredients:
1 brisket
1 onion, quartered and sliced
1 ½ c barbecue sauce
1 c wine
½ c white vinegar
Directions:
Preheat the oven to 325°F. Place the brisket into a baking pan or roaster. Place the onion slices around the beef. In a small bowl, combine the barbecue sauce, wine, and vinegar. Pour the mixture over the brisket. Cover well and place in the oven. Bake until the meat is soft. Allow to chill in the fridge overnight for clean slices or pull apart right away and enjoy today!
