Sweet Potato Chicken

This chicken dish is easy to prepare, requires minimal ingredients, is delicious, and can be made for Pesach (Passover) and year-round! Not only that, but it a great way to use up the orange marmalade you have in your refrigerator from that failed dessert attempt. Oh... is that just me? Anyway, enjoy this recipe!


Ingredients:

12-16 chicken drumsticks

4 sweet potatoes, peeled and diced

½ c craisins

¼ c oil

¼ c orange marmalade

½ c ketchup

1 tsp garlic powder


Directions:

Preheat the oven to 400°F. Spread the chicken and sweet potatoes out on a prepared baking sheet. Sprinkle the craisins over the chicken and potatoes. Combine the oil, marmalade, ketchup and garlic powder in a small bowl and mix well. Drizzle over the sheet pan and gently toss to coat. Place in the oven and bake until the chicken is cooked through and the sweet potatoes are soft on the inside and crisp on the outside.


Note: You can substitute a bag of frozen cubed sweet potatoes for the fresh sweet potatoes in this recipe and save yourself even more prep time.
