Quinoa is a great alternative to grains on Pesach and these patties (or latkas) are flavorful and delicious. Enjoy!
Ingredients:
1 1/2 cups rinsed Quinoa
3 cups water
2 Tbsp oil, plus more for the sheet pan
1 onion, diced
2 leeks, sliced
1 bunch fresh parsley, chopped
1 1/2 tsp salt
3 cloves garlic, minced
3 eggs
Directions:
Combine the water and Quinoa in a pot and cook until all of the water is absorbed. Set aside. In a pot or frying pan, heat the oil. Add in the onion, leeks, and parsley. Sauté until the leeks soften, at least 10 minutes. Add the garlic and salt and cook for a few more minutes. Add the cooked quinoa to the Leek mixture, and the eggs and stir well to combine. Preheat the oven to 400 degrees. Prepare a sheet pan (or two) by covering it with foil, spraying with cooking spray and brushing it with oil. Place scoops of the quinoa and leek mixture on the sheet pan, flattening the scoops with the palm of your hand (wetting your hand first will make this less sticky). Place in the oven and bake, flipping once, until crispy on both sides.
