Easy Dinners During the 9 Days?

We are in the middle of what we call The Nine Days, a time when we mourn the destruction and loss of the Bais Hamikdash (our Holy Temple). As is tradition when in mourning, we refrain from eating meat during those days. As no meat or chicken is served this week, I have gotten requests for dairy and parve (non-dairy and non-meat) dinner recipes that are family friendly and simple to make. Here are some of my favorite easy dinners, including the one I will be making at home tonight (click on the highlighted recipe names to get to the recipe):


Ricotta Gnocchi: Sounds complicated, bit these are easy and delicious. Not to mention absolutely loaded with protein! I am making these for my family tonight.


Creamy Spinach Lasagna Soup: If you don't mind eating soup in the middle of the blistering hot summer, definitely make this. A full meal in a bowl!


Peanut Ramen with Crispy Tofu: A takeout style dish, this has a few extra steps, but is still pretty simple, filling and absolutely delicious.


Green Salmon and Beans: Perfect for when you need an easy sheet pan meal!


Ras El Hanout Salmon: Throw this in the oven along with some frozen French fries and some frozen broccoli and you have an easy dinner with no cleanup.


Scallion and Cheddar Latkas: Who says these are only for Chanukah? These are quick and delicious!


ABC Minestrone Soup: Another one-pot, meal-in-one soup that your kids will love!


Unstuffed Shells: One pot pasta dishes are the best!


Corn Tortilla Lasagna: A twist on a dairy lasagne that you will want to make on repeat.


No-Boil Lasagna: A classic dairy lasagna with a terrific shortcut.
