Some days I have plenty of time of make dinner, complete with separate protein, vegetable and carbohydrate dishes. And then there are most days. This no-boil lasagna recipe is for the days when you need to put something in the oven, go run carpool, and come back to a fully-cooked meal. Or for the days when you are hosting 20 people for dinner on short notice. Or for the days when you are sitting in the emergency room with one family member and talking your kid through dinner preparation over the phone. Yes, that has happened. Trust me, you need this recipe.
Ingredients:
1 box lasagna noodles ( regular, not boil-free)
1 jar marinara sauce
16 oz cottage cheese
1 - 1 1/2 c shredded cheese
Directions:
Set your oven to 400 degrees. You have no time today, so don't use any baking dishes that you will have to wash later. Alternatively, you can line a pan with parchment or foil. Pour a small amount of marinara sauce into your 9 x 13 inch pan and spread it out across the bottom. Then, alternate layering the UNCOOKED lasagna noodles, cottage cheese, 1/4 cup of shredded cheese and marinara sauce until you have several layers. Your top layer should be noodles. Fill your now empty marinara jar about 3/4 full with water. Shake it up to get all of the remaining sauce and gently pour over the noodles. Sprinkle the remaining cheese over the top, cover your pan with foil and put it into the oven. It needs to bake for 2 hours, so go do what you need to do. If you have time, uncover the pan in the last 15 minutes of baking to allow the cheese to crisp up, but if you don't have time, it will still taste great.
