It is that time of year again. Soup season. When it is cold and dreary outside, all you want is a cozy bowl of deliciousness for dinner (or breakfast or lunch...no judging here). This filling ABC Minestrone Soup is a complete meal, loaded with veggies, beans, noodles and as many words as you can form from the letters you discover in your bowl. So sprinkle on some shredded cheese or parmesan and settle in for a comforting bowl of soup!
Ingredients:
2 Tbsp oil
1 onion, chopped
2 carrots, peeled and diced
1 parsnip, peeled and diced
8 oz mushrooms, halved and sliced
2 small zucchini, diced
1 lb. bag shredded cabbage or coleslaw mix
1 tsp salt
10 c water
10 oz can tomato soup
1 Tbsp parve chicken consomme
15 oz can kidney or white beans, rinsed and drained
1/2 c alphabet noodles
Directions:
Heat oil in a large pot. Add in onions and cook for 2 minutes. Add in the carrots, parsnip, mushrooms, zucchini, and cabbage. Cook for about 5 minutes, stirring occasionally. Add in the tomato soup, water, consomme, salt, and beans. Bring to a boil. Cook for about 15 minutes. Add the pasta to the soup. Boil, stirring occasionally, for another 15 minutes, or until the pasta is cooked. Serve warm, with shredded or parmesan cheese sprinkled on top (optional, of course).
