This Vanilla Loaf Cake is classic and delicious, and a perfect accompaniment to a cup of coffee or tea. Don't forget to add the secret ingredient. it makes all the difference. This cake also tastes delicious with or without the glaze, so it is your choice if you would like to add it. Unless you are out of confectioner's sugar, in which case it is no longer a choice.
Ingredients:
1 c oil
1 1/2 c sugar
2 c flour
1 Tbsp vanilla extract
4 eggs
1/2 tsp salt
1 tsp baking powder
1 c Sprite or other lemon lime soda
Glaze:
1 1/2 c confectioner's sugar
1/2 tsp vanilla
3 Tbsp water, or enough to thin the glaze
Directions:
Preheat the oven to 350 °F. In a mixing bowl, cream together the oil, sugar, eggs, and vanilla. Add in the flour, sugar, salt and baking powder. Mix well. Add in the Sprite and mix until well combined. Pour the batter into two prepared 9 inch loaf pans. Bake until golden brown and the top springs back when you press down on it with one finger. Cool completely. Once cool, combine all glaze ingredients in a small bowl, mix until completely combined, adding more water slowly as needed, and pour over the cakes. Allow the glaze to dry before serving.
