Creamy Portobello Linguine

This may not be the prettiest dish you ever make, but it will definitely be delicious. Enjoy this earthy, cheesy pasta whenever you need an alternative comfort meal.


Ingredients:

1 lb. Linguine pasta

6 portobello mushroom caps, cleaned, quartered, and sliced

2 medium onions, quartered and sliced

2 Tbsp oil

1/2 c red or white wine

2 tsp dried basil

2 tsp dried oregano

1 1/2 c shredded mozzarella

1/4 c cream cheese

1/4 c parmesan cheese

1/4 tsp salt


Directions:

In a pot, cook the linguine to al dente. Drain and place back into the pot to keep warm. While the pasta is cooking, in a saute pan, heat the oil and add the mushrooms and onions. Cook for 2 minutes and add the wine, basil, and oregano. Continue cooking until most of the liquid is gone and the onions have softened, stirring occasionally. Add the portobello mixture to the warm pasta. Mix in the shredded mozzarella, cream cheese, parmesan, and salt. Stir well, until the cream cheese is no longer in lumps and the cheese is melted and coating the pasta well. Get ready to enjoy a seriously scrumptious dish!
