Especially in a kosher kitchen, but really in any kitchen that gets lots of use, a second oven is very desirable. Either to separate dairy and meat cooking or so you can set each oven on different temperatures for different dishes, two ovens are better than one.
But not every kitchen has the space for two full ranges. And not every kitchen has the space for a double wall oven. So how do I fit the extra oven in? Sometimes I throw my hands in the air and install a range that has two ovens. The downside to that is that one oven will be very small.
The other good solution is to buy a wall oven, but not install it on the wall. If you need that valuable counterspace that a wall oven removes, try this instead. Install the single wall oven in a special oven base cabinet. That's right. Install the wall oven under the counter. An under-counter oven may be a little low to the ground when you are pulling pans out of the very bottom rack, but it gives you the full-sized oven without losing any counterspace. I have installed ovens like this several times (and by me, I mean the construction crew), and it always works out beautifully.
